Small Batch Vanilla Sheet Cake

Equipment

Ingredients

  • 1 ¾ cups almond flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • cup maple syrup
  • ¼ cup almond milk
  • 1 tbsp grapefruit juice
  • 1 tsp vanilla
  • 1 egg
  • 2 tbsp sprinkles

Vanilla Buttercream Frosting

  • 3-4 cups powdered sugar
  • 3 tbsp butter softened
  • 1 tsp vanilla
  • 2-3 tbsp almond milk

Instructions

  • Preheat oven to 350 degrees F. Spray a 9" x 13" sheet pan with avocado oil and line with parchment paper. Spray the parchment paper with more avocado oil.
  • Mix all of the cake ingredients in a small mixing bowl until smooth. Pour into the prepared sheet pan and bake for about 20 minutes until golden brown and the cake springs back when lightly touched. Allow to cool completely before frosting. Store in the fridge for up to 2 days.

Vanilla Buttercream Frosting

  • With a handheld mixer, whip the butter, powdered sugar, vanilla, and almond milk until smooth and creamy. Add more powdered sugar to make thicker, or more almond milk to make thinner as needed.
