Turkey Spinach Lasagna

This Turkey Spinach Lasagna is the perfect weeknight dinner. Layers of a spinach, mushroom, turkey marinara, creamy cottage cheese, and no-boil noodles make this lasagna easy, protein packed, and absolutely mouth-watering.

Lasagna is probably my favorite food. And I’m not talking just any lasagna, what I really mean is this Turkey Spinach Lasagna is my favorite. Something about the blend of noodles, cheese, and marinara really makes lasagna the perfect meal. I love that this one is packed with protein from the turkey and cottage cheese and also packed with veggies like mushrooms and spinach.

How to make Turkey Spinach Lasagna

I LOVE using no-boil noodles because it saves so much time and I do not notice a difference in taste! Try to find whole wheat no boil lasagna noodles if you can (DeLallo makes excellent ones).

Something a little different (but totally optional) that I do is puree the cottage cheese with an egg and some dried oregano. It creates that same traditional ricotta-like texture, but I prefer the flavor and easy-access of cottage cheese.

How to make Turkey Spinach Lasagna:

Step 1: Make the Turkey Spinach Marinara

Saute an onion and chopped mushrooms (I promise you can’t even taste the mushrooms; they just add a veggie boost!). Then add in the ground turkey. All that is left is throwing in some spinach and a jar of your favorite marinara sauce. Easy, quick, and tastes like you spent hours making it.

Step 2: Make the Creamy Cottage Cheese Layer

Toss a 16 oz container of cottage cheese into a food processor with an egg, dried oregano, and dried garlic. Pulse until creamy.

Step 3: Assemble

Put a little bit of the Turkey Spinach Marinara on the bottom of your baking dish.

Then add a layer of noodles. Then a layer of the Creamy Cottage Cheese.

Next, add another layer of the Turkey Spinach Marinara.

Now, another layer of noodles, then cottage cheese, then marinara.

Then noodles, cottage cheese, and marinara.

Lastly, a layer of noodles, cottage cheese, and marinara. Top with mozzarella and bake for about 40 minutes. Let rest for 10 minutes before slicing.

Turkey Spinach Lasagna

  • 1 onion diced
  • 1 lb ground turkey
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp ground pepper
  • 8 oz baby bella mushrooms diced
  • 5-6 oz fresh spinach
  • 1 jar marinara sauce I LOVE Rao's Marinara
  • 8 oz cottage cheese
  • 1 egg
  • fresh cracked pepper
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 9-12 no boil lasagna noodles
  • 1 cup shredded mozzarella


  • Preheat oven to 375 degrees F.


  • Onion for a few minutes until softened. Add the mushrooms and saute another minute.
  • Add the ground turkey, salt, pepper, garlic powder, and dried oregano. Break up the turkey with a spatula and saute until the turkey is fully cooked.
  • Add in the spinach and saute until wilted. Lastly, pour in the jar of marinara sauce. Adjust the amount of salt and pepper as needed.


  • In a food processor or blender, puree the cottage cheese with the egg, fresh cracked pepper, dried oregano, and garlic powder until smooth.


  • Layer a small amount of the turkey marinara on the bottom of a baking dish.
  • Add a layer of the no boil noodles.
  • Spread the creamy cottage cheese puree over the noodles using about 1/3 of the mixture.
  • Add about 1/3 of the turkey marinara next.
  • Now repeat the process: noodles then cottage cheese puree then turkey marinara.
  • Repeat one last time: noodles then cottage cheese puree then turkey marinara.
  • Finally, top with some mozzarella cheese and bake for about 40 minutes until the top is golden brown.
  • Let sit for at least 10 minutes before slicing and serving. Soooo yummy and makes amazing leftovers the next day.

  • I’m cooking the turkey spinach lasagne right now. I love the fact that the cheese sauce is replaced with a sauce made with cottage cheese. I also love the addition of fresh spinach to the meat sauce. Sure seems like a healthy alternative. I’m excited to taste it very soon, smells great while it’s baking. .
