Soft Almond Flour Chocolate Chip Cookies

Epic soft chocolate chip cookies made completely grain-free with a blend of almond flour + coconut flour and naturally sweetened with maple syrup. Not to mention these come together in 20 minutes!

Soft chocolate chip cookies are by far my favorite. And baked goods made with almond flour are just to die for, so combining the two was a no-brainer. I tested this recipe out on two of my best friends, and they love them as much as I do! Also, these are perfect to whip up when you are in a rush as they come together in less than 20 minutes are made with pantry staples (my pantry is always stocked with almond flour, coconut flour, maple syrup, and chocolate chips!).

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 tsp vanilla
  • 1/3 cup creamy almond butter
  • 1/3 cup maple syrup
  • 1/4 cup mini chocolate chips

Instructions

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Mix all ingredients in a small bowl until smooth. Scoop 1 tbsp amount of cookie dough onto the prepared baking sheet. Using your palm, slightly flatten the dough.
  • Bake for about 8 minutes until slightly golden but still soft. Enjoy!
