I think that having a really, really good vanilla cake recipe in your back pocket is a life essential. Birthday parties, holidays, intimate dinner parties, a long day after work, you name it and there is a reason to celebrate the day with a fork full of tender cake, vanilla frosting, and sprinkles.

This recipe is quick and simple. Just toss together almond flour, baking soda, salt, almond milk, maple syrup, grapefruit juice (my favorite trick to ensure a fluffy baked good), and an egg into the bowl.

Stir in some sprinkles, pour into a prepared sheet pan, and bake for about 20 minutes.

Now all that is left to do is whip up some frosting (or use store bought– no judgement here!), then frost and shake on those sprinkles. I found some all natural sprinkles from Whole Foods and love them.

Store leftovers in the fridge until ready to serve. My family absolutely adores this cake and requests it over the traditional vanilla cake made with butter and flour (but if someone from Sprinkles Cupcakes is reading this please send a cupcake my way!). Equipment

  • 9" x 13" sheet pan

Ingredients

  • 1 ¾ cups almond flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • cup maple syrup
  • ¼ cup almond milk
  • 1 tbsp grapefruit juice
  • 1 tsp vanilla
  • 1 egg
  • 2 tbsp sprinkles

Vanilla Buttercream Frosting

  • 3-4 cups powdered sugar
  • 3 tbsp butter softened
  • 1 tsp vanilla
  • 2-3 tbsp almond milk

Instructions

  • Preheat oven to 350 degrees F. Spray a 9" x 13" sheet pan with avocado oil and line with parchment paper. Spray the parchment paper with more avocado oil.
  • Mix all of the cake ingredients in a small mixing bowl until smooth. Pour into the prepared sheet pan and bake for about 20 minutes until golden brown and the cake springs back when lightly touched. Allow to cool completely before frosting. Store in the fridge for up to 2 days.

Vanilla Buttercream Frosting

  • With a handheld mixer, whip the butter, powdered sugar, vanilla, and almond milk until smooth and creamy. Add more powdered sugar to make thicker, or more almond milk to make thinner as needed.
