Nourishing Blueberry Muffin Bread
Easy, nourishing blueberry muffin bread made with almond flour, flax seed, and collagen peptides and lightly sweetened with maple syrup. The PERFECT treat, snack, or breakfast!
Ingredients
- 1 1/4 cup almond flour
- 1/4 cup collagen peptides or sub more almond flour
- 1/4 cup ground flax seeds
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/3 cup applesauce unsweetened
- 2 tbsp maple syrup
- 1 egg
- 1/2 cup blueberries
Instructions
- Preheat oven to 325 degrees F and line a loaf pan with parchment + spray with avocado oil.
- Mix all ingredients except blueberries in a small mixing bowl until smooth. Fold in the blueberries. Pour into the prepared loaf pan.
- Bake for 35-40 minutes until golden brown and the bread springs back when lightly touched.
- Keep at room temperature for up to 24 hours then move to fridge.
