Ingredients

  • 1 1/4 cup almond flour
  • 1/4 cup collagen peptides or sub more almond flour
  • 1/4 cup ground flax seeds
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/3 cup applesauce unsweetened
  • 2 tbsp maple syrup
  • 1 egg
  • 1/2 cup blueberries

Instructions

  • Preheat oven to 325 degrees F and line a loaf pan with parchment + spray with avocado oil.
  • Mix all ingredients except blueberries in a small mixing bowl until smooth. Fold in the blueberries. Pour into the prepared loaf pan.
  • Bake for 35-40 minutes until golden brown and the bread springs back when lightly touched.
  • Keep at room temperature for up to 24 hours then move to fridge.
