The ULTIMATE Paleo Banana Bread that is perfectly moist, lightly sweetened with a touch of maple syrup, and topped with dark chocolate. Easy, grain free, dairy free, and tastes too good to be true.
I LOVE banana bread. And I have made A LOT of banana bread, meaning that I kinda consider myself a banana bread connoisseur. With that being said, I have finally perfected my banana bread recipe with much trial and error, and it turns out the recipe is completely grain free, dairy free, and refined sugar free. However, I promise it is still “roll-your-eyes back, makes you wanna dance” good– does that make sense? If not, just know that you need this banana bread in your life, like, right now.
How do I make banana bread grain free, dairy free, and refined sugar free?
It’s simple! Instead of wheat flour, I opt for almond flour, which lends a supremely moist and tender crumb to the banana bread. In addition, I use three tablespoons of maple syrup to add just enough sweetness that keeps you coming back for another slice. To make the banana bread dairy free, use almond milk and 1 tablespoon of grapefruit juice, which is crucial to the structure of the bread. The acid from the grapefruit juice reacts with the baking soda to help it stay nice and fluffy.
I also add a hint of ground turmeric to the batter to naturally enhance the color of the banana bread, but it is totally optional.
Mix the almond flour, coconut flour, baking soda, salt, and ground turmeric together. Then add the mashed bananas, egg, almond milk, vanilla extract, and grapefruit juice.
Stir until fully combined, then top with your favorite dark chocolate bar.
Bake for about 30 minutes until the banana bread springs back when you lightly touch it.
Try to wait at least ten minutes before slicing. Warning: serves eight, but will be gone in one day–it is highly delicious. Let me know if you have any questions!
